Martha Stewart’s Fruit & Oat Smoothie

Ingredients

  • 1 cup quartered strawberries
  • 1 sliced banana
  • 1/4 cup raw almonds
  • 1/2 cup old-fashioned oats
  • 1 cup low-fat vanilla yogurt
  • 1 teaspoon maple syrup

Directions

  1. Toss into blender.

Chicken salad recipe from Shabby Shack!

Ina Garten made these wonderful sandwiches for a gala event with chutney and cheddar cheese.  Guess what?  No chutney at Meijer’s.  I will check Kroger’s next week.  Then, I saw this chutney chicken salad recipe.  I am on  a mission now.

 

CHUTNEY CHICKEN SALAD

Ingredients:

  • 1/2 cup of chopped celery
  • 1 cup of chopped red onion
  • 1 small Granny Smith apple, peeled and chopped
  • 1/4 cup of chopped pecans
  • 1 cup red seedless grapes, cut in half or quartered
  • 2 to 3 tablespoons of mayonnaise, or to taste
  • 2 tablespoons of a homemade or commercial fruit chutney (mango, peach, apple or mixed), or to taste
  • Kosher salt and freshly cracked black pepper, to taste
  • 3 to 4 cups of shredded or chopped cooked chicken
  • Freshly baked, over-sized croissants, white or whole wheat bread, preferably homemade
  • Additional mayonnaise for the bread
  • Curly lettuce and tomato, optional

Instructions

Combine first 8 ingredients and mix well. Add the chicken and toss; taste and adjust seasonings. Apply a thin layer of mayonnaise on a freshly baked, split croissants or soft, white or wheat bread. Add a generous amount of chicken salad and dress each sandwich with lettuce and juicy, sliced tomato, if desired. Can also be served over a bed of lettuce. Sprinkle the top with chopped tomato and a tiny sprinkle of additional minced pecans.

Sangria Recipe from Shabby Shack!

Sangria

Ingredients

  • 1 (large) bottle of Chardonnay
  • 1 (12 ounce) can of frozen lemonade
  • 1/2 cup of Light Rum
  • 1/2 cup of Triple Sec
  • 3/4 cup of simple syrup
  • 1 large (approximately 20 ounce) can of pineapple chunks or tidbits, in juice
  • 1 apple, unpeeled, cored, quartered and cut into chunks (I used a Gala)
  • 1 orange, halved and sliced thin
  • 1 lemon, halved and sliced thin
  • 6 strawberries, sliced
  • 1 can of lemon-lime soda (like 7-up, Sprite, Sierra Mist)
  • Whole strawberries, or lemon or orange slices, for garnish, optional
  • Maraschino cherries, for garnish, optional

Instructions

In a one gallon pitcher, combine the wine, lemonade, rum, Triple Sec and simple syrup. Stir well. Add the pineapple with the juice, apple chunks, orange and lemon slices, and sliced strawberries. Stir and refrigerate overnight or for several hours.

Just before serving, add in the 7-up and stir. Fill individual glasses halfway with ice, scoop out some of the fruit, then add more ice. Pour the sangria in and top off with a garnish of a fresh strawberry or a fresh slice of lemon or orange. Toss a cherry or two on top and serve!

Stuffed  Peppers Recipe

Ingredients

  • 1lb ground beef
  • 4 medium bell peppers with 1/2 inch trimmed off the tops. Cores and seeds discarded.
  • 1/2 cup long grain white rice
  • 1 1/2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, drained with 1/4 cup of the juice reserved
  • 5 ounces Monterey Jack cheese shredded
  • 2 tablespoons chopped, fresh parsley leaves
  • ground black pepper
  • 1/4 cup ketchup

Preheat the oven to 350 degrees.

To begin, bring 4 quarts water to boil in a large dutch oven over high heat. Add 1 tablespoon salt and the bell peppers. Cook until the peppers begin to soften (about 3 minutes). Remove the peppers from the pot and drain off the excess water. Place the peppers cut sides up on paper towels. Return the water to boil, add the rice and boil until tender (about 13 minutes). Drain the rice and transfer to a large bowl.

Heat a heavy-bottomed skillet over medium-high heat. Add oil and swirl to coat. Add the onion and stir occasionally until soft and beginning to brown. Add ground beef and brown. Make sure to break into small pieces as it cooks. Once completely browned, stir in the garlic and cook until fragrant. Transfer the mixture to the bowl with the rice, stir in the tomatoes, 1 cup cheese, parsley, then salt and pepper to taste.

In a small bowl stir together the ketchup and reserved tomato juice. Place the peppers cut side up on a baking dish. For stability, we found using ramekins, muffin tins, or a tube pan kept the peppers upright. Fill the peppers using a soup spoon, then spoon 2 tablespoons of the ketchup mixture over each pepper and sprinkle with the remaining cheese. Bake 25-30 minutes, then serve immediately.

Happy Easter from Shabby Shack!

Honey Bee Cake

Ingredients:
2 and 1/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup plus 2 tablespoons butter, at room temperature
3/4 cup sugar
1/3 cup honey
2 teaspoons vanilla
2 eggs, at room temperature
1 egg yolk, at room temperature
3/4 cup buttermilk, at room temperature

Directions:
Preheat oven to 350 degrees. Spray a 9 inch cake pan with cooking spray, line the bottom with parchment paper, and spray the paper.

In a bowl, sift together the flour, baking powder, and salt, then whisk the ingredients to mix well.

In the bowl of a stand mixer fitted with a paddle attachment, combine the butter, sugar, honey, and vanilla on low speed until blended. Increase the speed to high and beat until very light and fluffy, about 7 minutes. Scrape sides of bowl frequently with a spatula. Blend in the eggs and egg yolk one at a time, adding the next one as soon as the previous one has disappeared into the batter.

With the mixer on low speed, add the flour mixture in three parts, alternating with the buttermilk in two parts, beginning and ending with the flour. After each addition, mix until just barely blended and scrape the sides of the bowl. Fold the last of the flour in by hand with a spatula so that you don’t overbeat the batter.

Spread the batter evenly in the prepared pan, and rap the pan firmly on the counter to release any air bubbles. Place the pan in the center of the oven and bake for 45 minutes. Rotate the pan about half way through. The cake is done when it is firm on top, and a toothpick inserted in the middle of the cake will have a few moist crumbs attached.

Cool the cake in the pan on a wire rack for about an hour. Remove cake from pan, remove the parchment paper, and let it finish cooling. Serve barely warm or at room temperature, sprinkled with toasted almonds and drizzled with honey caramel.

 Banana Cream Pie

3/4 cup sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
2 cups milk
3 egg yolks, lightly beaten
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon vanilla extract
3 medium firm bananas
1 9 inch pie shell, baked
whipped cream or Cool Whip
sliced banana Directions:

In a saucepan, combine sugar, flour, and salt; stir in milk and mix well.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil; boil for 2 minutes.

Remove from the heat.

Stir a small amount of cream mixture into egg yolks; return all to saucepan.

Cook for 2 minutes, stirring constantly; remove from the heat.

Add butter and vanilla; mix well; allow to cool slightly.

Slice the bananas and place evenly in pastry shell; pour cream mixture over bananas.

Cool; before serving, garnish with whipped cream and bananas.

Refrigerate any leftovers.

Company Broccoli Casserole and Happy Easter from Shabby Shack!

COMPANY BROCCOLI CASSEROLE
 
1 (32 ounce) package frozen broccoli cuts, cooked according to package directions
1/2 cup of butter or margarine or 8 tablespoons, melted
1 1/2 sleeves of Ritz crackers (can use more), crumbled
1/2 to 3/4  of a 32 ounce package of Velveeta cheese, cut in chunks
1/2 teaspoon salt
1/4 teaspoon pepper
 
Cook broccoli cuts according to package directions. (I cook mine in a bowl in the microwave covered with saran wrap. Add 1/2 the melted butter, salt and pepper,  and the Velveeta cheese chunks to the broccoli. Stir to melt.  Add the other half of the melted butter to the Ritz cracker crumbs. Spray a 2 quart casserole dish and add a layer of the broccoli and cheese on the bottom.  Next add a layer of the buttered crumbs. Continue to do this ending with the top covered with the buttered crumbs.
Bake in a preheated 375 degree oven for 15 to 20 minutes until the top is browned.  Makes 8 to 10 servings. Enjoy!

Asparagus with Curry Sauce Recipe from Shabby Shack!

5-Ingredient Asparagus Recipe with Curry Sauce

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: Serves 4

Serving Size: 1/4 of the asparagus

Calories per serving: 47 cal

Fat per serving: Total 3.5g; Saturated Fat 0.4g

Ingredients

  • 2 tsp olive oil
  • 2 cloves garlic, minced
  • 1 lb. asparagus, cut into 1-inch pieces, tips and stalks separated
  • 1 tbsp mild curry paste (such as Patak’s)
  • 1/2 cup vegetable broth

Instructions

  1. Heat olive oil in a large nonstick skillet set over medium heat.
  2. Add the garlic and sauté for 30 seconds. Add the asparagus stalks and curry paste, and sauté for 2 minutes.
  3. Stir in the vegetable broth and bring to a simmer. Add the asparagus tips. Cook until the asparagus is just tender.
  4. Transfer the asparagus and sauce to a serving dish. Serve hot or at room temperature.

Good Morning Treats from Shabby Shack!

French Toast Cupcakes
4 Servings

Ingredients:
4 tsp. pure Maple Syrup
4 slices Cinnamon Raisin Bread
4 Large Eggs
1/2 cup 1% milk
1/2 tsp. ground cinnamon
1 tsp. pure vanilla extract

Topping (optional)
1 tsp. granulated sugar
1/2 tsp. ground cinnamon

Preparation:
1. Preheat oven to 400 degrees.
2. Place 4 foil cupcake liners in cupcake pan. Place 1 tsp. maple syrup in each of the four cupcake liners.
3. Tear 1 slice of bread into smaller pieces and place in one of the cupcake liners. Repeat for all 4.
4. Mix eggs, milk, cinnamon, and vanilla extra well with whisk.
5. Pour equally into each of the 4 cupcake liners. Let sit 5 minutes so bread can absorb the egg mixture. While this is standing, mix together the topping and sprinkle 1/2 tsp. over each cupcake.
6. Bake for 25 minutes until puffed and golden.

SHABBY SHACK EASY PEASY CHEESECAKE

Ingredients

For the Crust:

  • 1-1/2 cups of graham cracker crumbs
  • 1/2 cup (1 stick) of melted butter

For the Cheesecake:

  • 2 (8 ounce) blocks of cream cheese, softened at room temperature
  • 1/2 cup of granulated sugar
  • Juice of one lemon (about 2 tablespoons)
  • 1 teaspoon of pure vanilla extract
  • 2 large eggs

For the Topping:

  • 1 cup of sour cream
  • 3 tablespoons of granulated sugar
  • 1/2 teaspoon of pure vanilla extract
  • 1 (21 ounce) canned pie filling (strawberry, blueberry, cherry, lemon, etc.), optional, for garnish

Instructions

Preheat oven to 350 degrees F. To make the crust, combine the graham cracker crumbs with the melted butter, and press into an 8 x 8 inch baking pan. Bake at 350 degree F for about 5 minutes to toast; set aside to cool.

For the cheesecake, using a mixer, cream the softened cream cheese until fluffy, then gradually add in the 1/2 cup of sugar. Slowly add the lemon juice and vanilla and blend in; add the eggs and mix in on low until smooth. Pour into cooled crust and bake at 350 degrees F for 25 minutes. Remove and let rest on a rack while you make the sour cream topping

For the topping, combine the sour cream, 3 tablespoons of sugar and 1/2 teaspoon of vanilla. Spread evenly on top and return to the oven for 5 minutes. Let cool completely and refrigerate several hours or overnight before serving. Spread pie filling over the top or spoon over individual squares.

Yummy!
